Ok, I know this is a chef/geek term, but basically, I'm going to be looking at some techniques I've found in my travels, try to break them down as to why they do what they do, possibly why they're not in general cook books, and adapt them for my own use. Hopefully you'll find them useful too. This section of the web is motivated by a recent trip Kris and I took to Hawaii, where we met some wonderful cousins, and had a marvelous time. If you have any ideas on what I should look at, please let me know. Some of the recipes from our trips aren't here, like Ceveche, because those are pretty standard and there are loads of recipes out there on the Web. |
